Requirements:

Languages: Candidates must have knowledge of the English Language
Education: Candidates should have completion of Food Safe certification
Experience: Candidates should have a minimum of 2 years of culinary supervisory experience in high-volume kitchen operations

Physical Requirements:

  • The candidates should be able to handle excessive heat, long hours of standing, and stress
  • The candidates should be able to operate a vehicle and meet the minimum requirements of the PMV Driver’s Standards Policy
  • The candidates should be willing to work more than 40 hours per week and be on their feet throughout a ten-hour day

Other Requirements:

  • The candidates should have strong verbal, written, analytical, and interpersonal skills and strong computer literacy, especially with Microsoft Word, Excel, and Outlook
  • The candidates should have a desire to succeed, learn, and develop in a professional environment
  • The candidates should have Red Seal certification or industry-recognized experience and resort and catering experience

Responsibilities:

  • The candidates should be able to be responsible for proper storage procedures, food orders, food costs, equipment, sanitation, and hygiene of the outlet, ensuring compliance with health and safety regulations as required by the Interior Health Board of British Columbia
  • The candidates should be able to daily measure and schedule labour requirements according to budgeted costs and check food displays for quality, creativity, cleanliness, and food safety
  • The candidates should be able to constantly analyze cost and quality of food production and inspect the kitchen facility daily for hygiene, safety, and sanitation, implementing corrective procedures using the opening and closing checklist
  • The candidates should be able to communicate and offer recommendations for increasing revenue or decreasing COGs (Cost of Goods Sold) and labour and be responsible for tracking transfers to other departments
  • The candidates should be able to submit payroll information weekly as per set deadlines and conduct inventory counts regularly and within the required timelines
  • The candidates should be able to maintain a system to monitor and correct slow-moving products, making menu adjustments to align with industry trends when applicable
  • The candidates should be able to maintain a system around securing all storerooms and fridge or freezer areas to prevent theft
  • The candidates should be able to advise the Panorama Safety Committee of any incidents and prepare incident reports and participate in required operational meetings as directed
  • The candidates should be able to assist with the creation of food instruction manuals, in conjunction with the Food Safe Plan, ensuring all staff create dishes with consistency
  • The candidates should be able to ensure that all products are rotated and that a high level of freshness is always maintained and effectively communicate with all management, employees, guests, and anyone Panorama Mountain Resort does business with as a leader
